Mama’s Quinoa Salad
About 15 years ago I started learning about nutrition just as my mother started making experimenting with a healthier diet. She came across a recipe that was grain based, with fresh crunchy veggies, and cheese. It was light and delicious and the perfect way to start leaning into eating clean. Over the years this recipe has evolved and changed with us, which is why I have named it “Mama’s Quinoa Salad”. It is easy delicious and can be eaten as a complete meal, or as a side to your favorite grilled protein.
-1 cup quinoa
-2 cups water
-Juice of 1 lemon, divided
-2 Tbsp olive oil, divided
– ¼ tsp salt
-¼ tsp pepper
-½ cup cucumber chopped
-⅓ cup onion chopped
-½ cup celery chopped
-1 can garbanzo beans (chickpeas) drained and rinsed
-⅓ cup feta cheese, chopped into ½ inch chunks
-1 ½ tsp dried dill
-In a small saucepan combine 2 cups of water, juice of ½ lemon, 1 Tbsp olive oil and bring to a boil. Once boiling add in quinoa, bring back to a boil, reduce heat to low, cover and allow to simmer for 15 minutes or until all liquid is absorbed.
-Once quina is finished cooking, remove from heat and add the remainder of the olive oil, lemon juice, salt and pepper to the quinoa and mix well.
-In a large mixing bowl, combine the quinoa mixture and the remainder of the ingredients. Mix together until well combined.
-Allow mixture to sit for 15 minutes, still well, serve and enjoy!
