Gram’s Black Bean Surprise
Years ago my grandmother called me and told me she found a black bean burger recipe she wanted me to try and make. I did, it was delicious, and over the years it has turned into this infamous family recipe. Delicious and filling this Black Bean Burger recipe is the perfect vegetarian main, or a great side for your hard to please meat eating friends.
So why is it called Gram’s Black Bean Surprise? Because you can take this same base recipe and make stuffed peppers, or vegetarian chili. You never know what you are going to get with this recipe
-2 cans of black beans, drained and rinsed
-⅓ cup chopped broccoli
-⅓ cup portobello mushroom, chopped
-½ cup onion, chopped
-1 clove garlic minced
-⅓ cup nutritional yeast
-2 tsp worcestershire sauce
-½ tsp fennel seed
-½ tsp salt
-½ tsp pepper
-½ cup bread crumbs
-2 eggs, beaten
-4 Tbsp coconut oil
-Place black beans in a large bowl. Mash half of the beans and leave the other half whole.
-Add in all of the remaining ingredients, except the coconut oil and mix until well combined.
-Refrigerate the black bean mixture for 15-20 minutes before cooking.
– After the mixture has been refrigerated, heat the coconut oil over medium heat in a large skillet.
-Take ⅓ cup of the black bean mixture and form it into a “patty” and place in the hot skillet. Cook for 4 minutes on each side or until browned on the outside and cooked through.
-Remove patty from the skillet and let it rest on a cooling rack. Repeat with the remaining mixture, making about 10 black bean burgers.
-Enjoy in place of your favorite burger, on top of your salad, or all by itself.
- To make stuffed peppers, cup the tops off 4-6 peppers (depending on the size), chop the extra pieces of pepper and add into the black bean mixture. Add 1 cup of your favorite tomato sauce to the mixture, and stuff each pepper with about 1 cup of the black bean mix. Place in a shallow pan, filled with ½ inch water, and cook covered in the oven for 30 minutes. Remove the cover cover, top with mozzarella cheese and cook for another 5 minutes or until the cheese is melted. Enjoy!
- To make chilli, heat 3 Tbsp of olive oil over medium heat in a large pot. Pour black bean mixture into the pot and cook for 5-7 minutes until the black bean mixture starts to brown. Add the following spice mixture to the pot and cook for another 2 minutes (1 tsp paprika, 1 tsp cumin, 1 tsp coriander, 1 tsp adobo seasoning, ½ tsp chili powder). Add 1 28 ounce can of tomato sauce and stir well. Add 2 Tbsp of dark chocolate, stir in and let melt, cook for another 15 minutes. Enjoy!
